Description

This Carrot Cake Cheesecake combines the flavors of carrot cake and cheesecake in one dessert. Enjoy the creamy texture and spiced cake.


Ingredients

  • 2 (8 oz) pkgs. cream cheese, softened
  • 2/3 cup granulated sugar
  • 1 1/2 tsp all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 Tbsp butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup (+ 2 Tbsp) sour cream
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350 degrees. Butter a 9-inch springform pan.
  2. Whisk together sugar and flour. Add cream cheese and blend until smooth.
  3. Mix in eggs and vanilla. Blend in sour cream. Tap bowl to release air bubbles.
  4. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Add canola oil, applesauce, granulated sugar, brown sugar, eggs, and vanilla extract. Blend.
  6. Slowly add in dry ingredients and mix until blended. Add carrots and mix. Tap bowl to release air pockets.
  7. Pour 1 1/2 cups carrot cake mixture into the pan. Dollop cream cheese mixture over carrot cake layer.
  8. Spoon remaining carrot cake mixture over cream cheese layer. Drizzle remaining cheesecake mixture over carrot cake layer.
  9. Bake for 60-65 minutes. Tent with foil at 40 minutes. Cool on a wire rack for 1 hour. Chill in the refrigerator for 6 hours or overnight.
  10. Whip together cream cheese and butter until smooth. Add remaining topping ingredients and mix.
  11. Spread evenly over cheesecake. Chill in freezer for 20-30 minutes. Sprinkle edges with pecans. Remove springform pan ring. Cut into slices. Store in refrigerator.
