Description

Classic North Carolina Lemon Pie is a tart and sweet dessert featuring a buttery cracker crust and a creamy lemon filling.


Ingredients

  • 6 oz buttery crackers
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 21 oz sweetened condensed milk
  • 6 large egg yolks
  • ¾ cup fresh lemon juice
  • 1½ tbsp lemon zest
  • ½ cup heavy cream (optional)
  • 2 tbsp powdered sugar (optional)
  • Lemon zest or candied lemon peel (optional)

Instructions

  1. Preheat oven to 350°F. Crush crackers and mix with sugar and melted butter. Press into a 9-inch pie dish and bake for 10 minutes.
  2. Whisk together sweetened condensed milk and egg yolks. Add lemon juice and zest, and whisk until combined.
  3. Pour filling into the crust and bake for 16-18 minutes, until the center is just set.
  4. Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours.
  5. Whip heavy cream with powdered sugar until soft peaks form. Spread over chilled pie. Garnish with lemon zest or candied lemon peel.
