Enjoy these easy-to-make Gluten-Free S’mores Bars. They feature a gluten-free graham cracker cookie base, marshmallow fluff, and chocolate chips.

- 113 grams unsalted butter, at room temperature
- 100 grams light brown sugar
- 40 grams granulated white sugar
- 1 large egg, at room temperature
- 1 egg yolk, at room temperature
- 1 teaspoon vanilla
- 165 grams Gluten Free Flour (with xanthan gum)
- 110 grams Ground Gluten Free Graham Crackers
- 10 grams cornstarch
- 2 teaspoons milk powder (optional)
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
- 120 grams Marshmallow Fluff
- 100 grams chocolate chips
Instructions
- Grind gluten-free graham crackers in a food processor or blender.
- Combine ground graham crackers, gluten-free flour, cornstarch, milk powder (if using), cinnamon, salt, and baking powder in a bowl.
- Cream butter, light brown sugar, and white sugar in a mixer for 5 minutes, until light and fluffy. Scrape down sides as needed.
- Add egg, egg yolk, and vanilla. Mix for 30 seconds, scrape, and mix for another 30 seconds.
- Add dry ingredients to the mixer at low speed and mix to combine. Scrape down the sides.
- Chill the graham cracker cookie dough in the fridge for 20-30 minutes.
- Preheat oven to 350˚F and place a rack in the center.
- Line an 8×8 baking pan with foil, leaving overhang, and spray with non-stick spray.
- Press ⅔ of the cookie dough on the bottom of the pan.
- Top with marshmallow fluff, spreading evenly.
- Sprinkle chocolate chips evenly over the marshmallow fluff.
- Press the remaining cookie dough into thin disks and top the chocolate marshmallow layer.
- Bake at 350F for 28-32 minutes, rotating halfway. The cookie dough should be golden brown.
- Remove from oven and cool completely on a wire rack.
- Freeze the s’mores bars for 10-15 minutes for easy cutting.
Notes
- Chilling the dough makes it easier to handle.
- Use hot water or a torch to heat a spoon or offset knife for easier marshmallow fluff spreading.
- Freezing the bars slightly before cutting prevents sticking.
