- 2 cups all-purpose flour
- 2 teaspoons baking powder

- ¾ cup canola or vegetable oil
- 4 large eggs
- 1 ½ cups packed light brown sugar
- ½ cup granulated sugar
- ½ cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 3 cups grated carrots
- 1 (8-ounce) package cream cheese
- ½ cup unsalted butter
- 2 cups powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350°F (180°C). Prepare two 9-inch cake pans.
- Whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a separate bowl, whisk oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla. Add carrots.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Pour batter into pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool in pans for 20-25 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat cream cheese until smooth. Add butter and mix until smooth.
- Add powdered sugar and vanilla extract, and mix until combined.
- Level cake layers. Place one layer on a stand, top with frosting. Add the second layer and frost the entire cake.
