Ingredients

  • 1¾ cups (210 g) all purpose flour
  • 2 tbsp (14 g) cornstarch
  • 1½ tsps baking powder
  • ½ tsp salt
  • ½ cup (120 g) warm milk
  • 3 tbsp (42 g) lemon juice
  • ¾ cup (170 g) unsalted butter
  • 2 tbsp (26 g) unflavored vegetable oil
  • 1 cup (200 g) white granulated sugar
  • 1½ tbsp lemon zest
  • 3 large eggs
  • ¼ cup (50 g) white granulated sugar (for syrup)
  • ¼ cup (55 g) lemon juice (for syrup)
  • 1 cup (125 g) icing sugar (for glaze)
  • 1½ tbsp (21 g) lemon juice (for glaze)
  • 1 tbsp lemon zest (optional, for glaze)

Instructions

  1. Preheat oven to 160 °C (320°F) and line an 8.5×4.5inch loaf tin.
  2. Sift together flour, cornstarch, baking powder, and salt. Mix well and set aside.
  3. Combine warm milk and lemon juice in a small bowl. Set aside.
  4. Cream together butter, vegetable oil, sugar, and lemon zest for 2 minutes until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Add half of the milk/lemon juice mixture and mix until combined.
  7. Fold in half of the dry ingredients until just combined.
  8. Add the remaining milk/lemon juice mixture and fold until just combined.
  9. Add the remaining dry ingredients and gently fold until just combined. Do not overmix.
  10. Pour batter into the loaf tin, spread evenly, and bake for 1 hour, or until a skewer comes out clean.
  11. Cool in the loaf tin for 15 minutes. Prepare the lemon syrup.
  12. For the syrup, combine sugar and lemon juice in a saucepan. Heat until sugar is dissolved.
  13. After 15 minutes, remove the lemon loaf and place it on a tray.
  14. Cover the entire cake in the lemon syrup, including the bottom.
  15. Let the lemon loaf completely cool. Then make the lemon glaze.

Notes

  • If you don’t have a fan function, adjust baking time accordingly.
  • Do not overmix the batter to maintain a moist texture.
