Instructions
- Preheat oven to 375°F (190°C).
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chopped peaches.
- In a small bowl, combine rolled oats, flour, and brown sugar for the crumble topping. Cut in cold butter until mixture resembles coarse crumbs.
- Drop rounded tablespoons of cookie dough onto baking sheets.
- Sprinkle each cookie with crumble topping.
- Bake for 10-12 minutes, or until edges are golden brown.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

- Use ripe but firm peaches for best results.
