Description

Enjoy these delicious pumpkin fritters with a flavorful bourbon cream cheese glaze. They are perfect for breakfast, brunch, or a sweet treat.


Ingredients

  • Vegetable oil for frying
  • 1 cup all-purpose flour
  • 1 1/4 tsp baking powder
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 1/2 tbsp milk
  • 1 tbsp butter melted
  • 1 tsp vanilla extract
  • 4 oz cream cheese room temperature
  • 1 tbsp vanilla extract
  • 1 cup confectioner’s sugar
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1–2 tbsp milk optional

Instructions

  1. Add about 2 inches of vegetable oil to a saucepan and heat over medium heat. Place paper towels on a plate to drain fritters.
  2. In a bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a larger bowl, add pumpkin puree, milk, egg, brown sugar, and vanilla. Whisk until combined.
  4. Add flour mixture to the pumpkin mixture, half at a time. Stir until combined. Batter should be thick.
  5. Use a tablespoon to add fritter mixture to the hot oil. Do not overcrowd; add 3-4 fritters at a time.
  6. Cook fritters for 2-3 minutes, then turn over. Cook for 3 more minutes, or until golden brown. Remove and place on paper towels to drain.
  7. While fritters are frying, add all glaze ingredients, except milk, to a medium bowl.
  8. Mix the glaze until combined.
  9. If the glaze is too thick, slowly whisk in milk, one teaspoon at a time, until you reach the desired consistency.

Notes

  • Adjust the amount of bourbon in the glaze to your preference.
  • Serve fritters warm with the glaze drizzled on top.
