Enjoy these classic Canadian butter tarts. They feature a flaky pastry and a sweet, gooey filling.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup cold vegetable shortening
- 5–7 tablespoons ice water
- 1/2 cup butter, melted
- 1 cup brown sugar
- 1/4 cup corn syrup
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1/2 cup raisins (optional)
Instructions
- Make the pastry: Combine flour and salt. Cut in butter and shortening until mixture resembles coarse crumbs.
- Add ice water, 1 tablespoon at a time, until dough comes together.
- Wrap dough and chill for 30 minutes.
- Make the filling: Mix melted butter, brown sugar, corn syrup, egg, and vanilla. Stir in raisins, if using.
- Roll out pastry and cut into circles. Press into muffin tins.
- Fill each tart shell with filling.
- Bake at 375°F (190°C) for 18-20 minutes, or until pastry is golden and filling is set.
- Let cool before serving.
Notes
- For a richer flavor, use dark brown sugar.
- Add nuts or other dried fruits to the filling for variety.
- Store baked tarts in an airtight container at room temperature.
